Steps to make Lemon pickle:
- For making the pickle wash the lemons and keep it in water for 3 to 4 hours. Then clean it with dry cloth. No water drop should be left on the lemons.

- Let it rest for 3 to 5 days. Meanwhile shake the container once in a day to mix the pickle. After 3 to 5 days the rind of lemons will get softened and the pickle is ready to eat without tempering it or to enhance the flavour temper it.
- For tempering the pickle heat oil and add mustard seeds, cumin seeds. Allow them to crackle then add ginger garlic paste and saute it till it turns light golden brown.
- Add the lemon pickle pieces, red chilli powder, turmeric and mix well.
It goes great with lentils, curries, vegetable biryani, rice, stuffed flatbreads and naan. While making pickle, make sure the container, spoon, jar are all completely moisture free otherwise the pickle will be spoiled.
