- First of all preheat the oven to 180° for 10 minutes.
- By the time it is preheating, make small bowls out of the mashed potatoes.
- Add olive oil, salt and pepper to the potato mix before shaping.
- Spread some ketchup first in the bowls and then top with the favourite veggies.
- Bake on 180° for about 15 minutes.
- After 15 minutes, remove and add generous amount of cheese on top. Bake again for 2 to 3 minutes just until the cheese melts.
