  1. Prepare 1/3 cup cooking oil
  2. Take 4 cups rice
  3. Take 8 oz tomato sauce
  4. Make ready 1 tbls salt
  5. Take 2 tbls Caldo de Tomoto
  6. Make ready 1 1/2 tsp black pepper
  7. Get 1 tsp minced garlic
  8. Make ready 1 tsp onion powder
  9. Prepare 1 tsp cumin
  10. Make ready 9 cups water
Steps to make Mexican Rice:
  1. Heat oil
  2. Add rice, toast until brown
  3. Warm water in a separate pot. Add salt garlic, onion powder, cumin, black pepper and Caldo de Tomato. Do not boil, just warm.
  4. Add tomato sauce to water mixture, stir
  5. Pour the water mixture over the browned rice, it may create steam be careful. Stir once
  6. Cook over low heat uncovered for 5 minutes
  7. Continue cooking COVERED for 25 more minutes. Do not stir
  8. Remove from heat, uncover and stir
