- Take 500 gms chicken
- Make ready 1 medium size onion finely chopped
- Make ready 2 tomatoes finely chopped
- Take 1 tsp ginger
- Take 1 tsp turmeric powder
- Get as required Oil
- Take handful coriander leaves
- Prepare as required Salt
Steps to make Chicken Kolhapuri:
- Take a pan. Add oil, once hot add onions, saute it well add garlic and give it a nice mix. Transfer it in a bowl.
- Add dry coconut and roast it well.Keep it in the same bowl.
- Add red chillies saute it well, add all the other spices required for the kolhapuri masala and dry roast them well. Remove it in the bowl.Once cooled grind it to a fine paste along with tamarind. Your Kholapuri masala is ready
- Take chicken.Marinate it with salt, turmeric and some kolhapuri masala and set it aside for around 15-20 minutes.
- Take a pan.. Add oil.. Once hot.. Add onion and let it cook till golden brown.Add ginger and saute it well.
- Add tomatoes and cook till they are soft and mushy. Add the Kholapuri masala and let it cook for around 5-7 minutes.
- Now add the marinated chicken. give it a nice mix and let it cook for around 2-3 minutes.Add water accordingly.Cover it and cook on medium flame for 20 minutes.
- Garnish it with coriander leaves.You can serve it with rice, rice rotis or bajra rotis.
