The ingredients needed to make Mutton Haleem:
- Make ready 2 cups boiled mutton, shredded
- Take 2 tbsp. masoor dal (red lentil)
- Prepare 2 tbsp. chana dal (Bengal gram lentil)
- Take 2 tbsp. moong dal (Split green gram lentil)
- Get 2 tbsp. tuvar dal (pigeon pea lentil)
- Take 2-3 tbsp. oats
- Prepare handful almonds and cashews, chopped
- Take 3 tbsp. ghee / oil
- Take 2 bay leaves
- Take 1 inch cinnamon stick
- Make ready 2-3 green cardamoms
- Get 4-5 cloves

- Make ready 1 tbsp. ginger-garlic paste
- Prepare 2-3 green chilies
- Get 1 cup coriander leaves
- Take 1 cup mint leaves
- Get to taste salt
- Take 1/2 tsp. turmeric powder
- Take 1 tsp. garam masala powder
- Take 2-3 tbsp. dry rose petals (opt)
- Get as needed lime juice
- Get 2 tbsp. fried onions
- Make ready as needed few dry fruits to garnish
- Get as needed coriander & mint leaves to garnish
- Make ready as needed lime wedges to garnish
Traditionally, Haleem is prepared in two ways. In one variety, there is just wheat, barley and spices along with the meat. Here is the recipe of Mutton Haleem, takes quite a lot of time and patience, but is totally worth it. It a recipe that has made it way to India from the Middle East, and though Hyderabad is mainly famous for.
Steps to make Mutton Haleem:
- Dry roast the lentils, almonds and the oats for 2 minutes or till you get a nice aroma coming through. Soak in sufficient water for 3-4 hours.
- Heat ghee / oil in a pan and temper with cinnamon, cardamoms, cloves, peppercorns and cumin seeds. Saute for a few seconds.
- Add the onion and fry till light brown.
- Now add the ginger-garlic paste,
- Green chilies and all the dry spices. Fry for a minute.
- Add the drained lentils,
- Mutton,
- Rose petals, coriander leaves, mint leaves
- And 4 cups water. Pressure cook for 20-25 minutes on a low flame after the first whistle.
- After the pressure is released, simmer further on a low flame. Keep mashing while it is simmering.
- Garnish with coriander leaves, mint leaves, fried onions, dry fruits & lime wedges.
