- In the same pan add ghee and roast semolina on low flame till it changes it's colour. Then keep aside to cool down.
- In a big bowl take powdered sugar, add roasted dry fruits coconut and semolina.and grated mawa. Now add nutmeg powder, cardamom powder, and Mix well. - Gujiya filling is ready to use.
- Now roll out 4/6 flat breads (puris) from the dough and add spoonfuls of the filling to it. Use Gujiya mold or Roll it into halves and seal the edges of the puri with your fingers.
- Heat oil in a deep bottomed pan and when it is piping hot release the gujiyas in it. It will float up while frying on medium low flame and when it is golden brown strain it.
- Take pan add sugar and water and make slightly thik sugar syrup consistency (1 tar chashani) cool than dip quickly out them cool in room temperature.Serve colourful healthy and delicious Gujiyas to celebrate Holi.
