  1. After cutting watermelon retain the skin on and peel twice as watermelon has thick skin. Cut into small pieces
  2. Make a purée of watermelon rind cut pieces in the food processor and set aside
  3. In a wok heat ghee, add besan, add sooji and stir for 5-7 mins.
  4. Add watermelon purée and stir for 10 mins until water is absorbed
  5. Add sugar and stir for another 10 mins because sugar will leave water
  6. Stir for 1-2 mins more and add cardamom powder, jaiphal and stir for 1 min.
  7. Add milk and stir to cook thick consistency.
  8. Add chopped almonds and pistachios.
  9. Plate it well and garnish with further chopped pistachios and almonds. Enjoy!
