  1. Marinate mutton in yogurt and a little salt,leave for 30 minutes.

  3. Dry roast all the whole spices mentioned,transfer in a drinding jar.Grind to a powder.Add roasted onion and garlic,add a little water and mahe a smooth paste.
  4. Add dessicated coconut too to the grinder and again grind all the spices to a smooth paste.This is called Xacuti paste.Keep aside.
  5. Heat ghee in a pressure cooker,add onion.Fry till golden.Add marinated mutton.Stir and cook till water dries.
  6. Add xacuti paste,stir and add coriander powder.Stir well.Add salt and 1 cup water.
  7. Pressure cook on high flame till 3 whistles,then lower the flame to medium-low and further cook for 5 minutes.Let pressure release itself.
  8. Add lemon juice and sugar to the mutton,stir.Cook on medium flame till ghee separates.Adjust gravy as you desire.
