- Get 2 cups lauki
- Prepare 4 tbsp besan

Lauki Kofta Recipe - About Lauki Kofta Recipe: Bottle gourd or Lauki is generally a boring vegetable to many people, especially kids. But one way to add this healthy vegetable in diet is to make yummy deep- fried koftas out of it. The combination of fried koftas and spicy curry is wonderful and would be loved by people of all ages. The presence of Lauki in the kofta remains unrealized.
Steps to make Lauki kofta:
- Rinse and peel the lauki.. Grate it
- Squeeze the grated lauki and collect the juice in a bowl.
- Mix all the ingredients for making the koftas with the grated lauki except oil
- Make small round shapped balls
- Heat oil in a kadai fry the lauki kofta in the oil.till they are golden brown from all the sides.
- Drain the fried koftas on tissues so that extra oil is absorbed
- Blend all the ingredients mentioned under masala paste with little water to a smooth paste.
- Don't add too much water as then the whole mixture splutters while frying
- Remove extra oil from frying pan in which the koftas were fried. Keep about 2 tbsp oil
- Heat the oil and first fry the cumin.. Then add the masala paste
- Stir and continue to fry the masala paste till it starts leaving oil from the sides.
- Add the juice and about 1 cup water to paste
- Stir and simmer for 10-12 minutes. Lastly add fried koftas
- Switch off the heat and let them be in the curry for a few minutes.
- Garnish with coriander leaves and serve lauki kofta hot
