  11. Make ready Salt - 2 tsp (as required)
  12. Prepare Coriander leaves - 3 string

Now add the goat liver pieces and fry the liver at medium-high heat. You might need to sprinkle water in-between if you see the spices charring. This step is called koshano and will take some time until you see the liver pieces changing color to a deep brown. Add the fried potato cubes and mix well.

Steps to make Goat liver fry:
  1. In a pan add oil, fennel seeds, curry leaves finely chopped garlic and roast it well. Add Ginger garlic paste and saute till raw smell vanishes.
  2. Now add finely chopped onions and fry till the onions turn golden brown and add salt, turmeric powder, chilli powder, garam masala and cumin powder and roast well.
  3. Once the mixture releases oil add the goat liver to it and mix well.
  4. Cover and cook for 5 minutes and the goat liver is done. Add coriander leaves for garnishing.
  5. Enjoy with hot steamed rice.

Though it has many nutritional benefits, moderation is advised due to its high cholesterol content.
